There’s nothing better on a cold Kentucky morning than this traditional breakfast of country ham and red eye gravy. If you’ve got an active morning raking leaves ahead of you, try this breakfast on for extra taste and stamina.
Ingredients:
- 6 slices of country ham
- 1/4 to 1/2 cup of oil
Remove any skin on the ham (but leave fat) and cut each large slice into three smaller pieces. In a heavy skillet heat the oil on medium heat.
Place ham in the hot oil a few pieces at a time and cook until a nice brown on each side. Try not to overcook or it will be tough and dry. Leave meat bits and oil in skillet to make gravy.
Red Eye Gravy
- 1/2 cup of brewed coffee
- 1/3 cup water
Pour the coffee and water into the skillet that you fried the ham in. Let it come to a boil for 3 or 4 minutes. Serve gravy in small bowls or pour over biscuits. Eggs and hash browns make perfect ham companions.
