Simplest Tomato Salad

It’s that time of year. Tomatoes are ripening and nothing tastes better than this simple sliced tomato and garlic salad. There are many variations of it*, but I still prefer this most basic of primary flavors.

I first had this particular salad at an Italian restaurant in Key West many years ago. The chef gave me the very simple recipe, which I didn’t have to write down.  It’s that easy. Click “Read More” for the simple recipe.

Ingredients:

  • Fresh sliced tomatoes
  • Fresh minced garlic
  • Olive Oil (a good quality “Extra Virgin”)
  • Salt & Pepper to taste

Directions:

Simply slice tomatoes and arrange on a platter.  Mince the garlic and sprinkle over tomatoes. Drizzle with olive oil.  Season lightly with salt and fresh ground pepper.

*There are many variations on this salad. Some people add fresh chopped basil or oregano. Some add bits of goat cheese or fresh mozzarella. Others like it with onions or green or black olives. I have had it with fresh bacon crumbled by hand on it. There are virtually no limits, but I still prefer this most basic of all recipes for its combination of primary distinct flavors and no unhealthy additives.
